Roasted Grape Tomato Pasta

Roasted Grape Tomato Pasta

  • 5 - 10 chopped fresh mint leaves
  • 15 - 20 chopped basil leaves
  • 1/2 package of pasta noodles
  • 1/2c pasta water
    • 20oz grape tomatoes 
    • 4 cloves of garlic
    • 1/2 of a red onion 
    • Olive oil
    • Salt and pepper
    1. Preheat your oven to 450 F
    2. Rinse your grape tomatoes to clean and add into a roasting dish.
    3. Smash four cloves of garlic and cut into fours- add to roasting pan.
    4. Cut your onion into eights vertically- add to roasting pan.
    5. Coat with olive oil- just enough to make the tomatoes shiny but not wet.
    6. Sprinkle a generous amount of salt and pepper and mix everything together so your ingredients are coated fairly.
    7. Pop your pan into the oven and allow your tomatoes to swelter and prune for about 30 to 40 minutes. 
    8. While your tomatoes are cooking, begin to make your pasta. 
    9. Fill a large pot with water and set over high heat.
    10. Once it is boiling add a handful of salt and your pasta noodles.
    11. Allow your noodles to soften.
    12. Once they are ready to eat, save about a half of a cup of the salted pasta water and strain the rest.
    13. If your tomatoes are beautifully browned and cooked down, add your pasta water and fresh herbs.
    14. To your roasting pan, add your noodles and toss everything together.
    15. Plate your noodles, maybe add a touch more of olive oil, garnish with your herbs, and enjoy.
