Roasted Grape Tomato Pasta
- 5 - 10 chopped fresh mint leaves
 - 15 - 20 chopped basil leaves
 - 1/2 package of pasta noodles
 - 1/2c pasta water
 
- 20oz grape tomatoes
 - 4 cloves of garlic
 - 1/2 of a red onion
 - Olive oil
 - Salt and pepper
 
- Preheat your oven to 450 F
 - Rinse your grape tomatoes to clean and add into a roasting dish.
 - Smash four cloves of garlic and cut into fours- add to roasting pan.
 - Cut your onion into eights vertically- add to roasting pan.
 - Coat with olive oil- just enough to make the tomatoes shiny but not wet.
 - Sprinkle a generous amount of salt and pepper and mix everything together so your ingredients are coated fairly.
 - Pop your pan into the oven and allow your tomatoes to swelter and prune for about 30 to 40 minutes.
 - While your tomatoes are cooking, begin to make your pasta.
 - Fill a large pot with water and set over high heat.
 - Once it is boiling add a handful of salt and your pasta noodles.
 - Allow your noodles to soften.
 - Once they are ready to eat, save about a half of a cup of the salted pasta water and strain the rest.
 - If your tomatoes are beautifully browned and cooked down, add your pasta water and fresh herbs.
 - To your roasting pan, add your noodles and toss everything together.
 - Plate your noodles, maybe add a touch more of olive oil, garnish with your herbs, and enjoy.
