Grapefruit Fennel Salad
Success
Success is not a dollar sign
Nor a mansion
Or the chair I sit.
She is no five star reservation
Or the “now” place to be.
She does not see the label I wear
Nor the people who surround me .
She does not introduce herself with ego
Or wipe her hand after meet,
For success is not that type.
Success is open arms
she sees us from within.
She is opulent in her own.
For success loves her kin.
She is happy eating on the floor
Alone or among her friends
For it knows she’s happier now than she was then.
Grapefruit Fennel Salad
1/2 tablespoon of sesame oil
1 minced clove of garlic
A squeeze of lime juice
Salt and pepper
2 grapefruits- peeled and gutted
3 large carrots grated
1 sliced fennel bulb
1 chopped jalapeno
1/4 cup chopped cilantro
In a medium size bowl combine all ingredients and mix together.
Serve over rice or eat it on its own!
